This kit takes time before it is bottled and ready to drink; however, after the initial fermentation, taste tests were already delicious. We bought the orange blossom honey variety for this kit. The instructions were pretty clear; however, they do not provide any guidance or recommendations on how to stabilize (additives, clearing agents) or on back-sweetening if you want a sweeter mead. The only reason they call this a \"sweet\" mead kit, is, the wine yeast variety they include will only ferment so far - it stops when there are still residual sugars left in the wine, so it is not completely dry. Still... ALL the more reason to provide some instructions on how to ensure those residual sugars do not start re-fermenting in bottles later on. After some research in online wine groups, we added 1 crushed campden tablet plus 1/4 tsp potassium sorbate per gallon; and, we are also using SuperKleer. It will rest for several months in the carboy before we bottle, but we already are looking forward to enjoying this delicious mead based on taste tests.
