Hi Kim - Unfortunately, vegan mac & cheese is not going to taste exactly like real mac (at least for now). I know one day there will be a cheese alternative that tastes just like real cheese, but until then, we can only work with what we have. You could try upping the amount of vegan parmesan. You might also want to check out my new Baked Mac & Cheese recipe. It has \"bacon\" bits and a crispy topping that add another layer of flavor. Hope that helps!
This dish was the bomb!!! My tween daughter is a mac and cheese expert and said this was really good and she could not tell it was a vegan dish. I forgot to take photos but I will be making again and again and I will snap photos!!
Place a grill over top {to prevent the bottoms from burning!!!} and heat up your mac n cheese 8-10 minutes or until hot and cheesy! YUM. Depending on how hot your fire is, this could take no time at all, or could take a little longer. The key is to not set them directly over your heat source. Burnt mac n cheese was never good.

How would you adjust this for a gluten-free pasta In my limited experience, GF (rice) pasta cooks MUCH faster than traditional, so presumably would need less baking time Maybe baking for only 20-30 minutes covered and then slid under a broiler for the last few minutes to caramelize the cheese on top I love this idea of not preboiling the pasta, especially since GF pasta goes from al dente to mush in no time at all.
I have made this many times and plan to make it this Thanksgiving! I have only ever used mascarpone (instead of cottage cheese or ricotta) and cabot cheddar. The texture has always been excellent the recipe loved by all from the 2 year old to the grandparents. An amazing go-to for my family!
I have been making this recipe for years and cannot believe I have not yet left a comment. I will forever defend this recipe. It is not your creamy, saucy, kind of mac and cheese, but it is simple and divine. I typically use sour cream but this time I had whole milk Greek yogurt needing to be used. The end result was just as amazing. I also tend to lean towards the 3/4 of the amount of cheese prescribed method to feel slightly better about the enormous serving I consume. Made this for dinner using ricotta. It is quite tasty but next time I will not dot the butter on top as it just became an oily mess, but will use more than quarter cup of cheese on top. So happy not to have to cook noodles before hand!
